Bacon-Wrapped Nectarines

Served with mozzarella, fresh basil & chocolate mint

These are fun to make and to serve! Ben and usually collaborate on these appetizers — he grills, and I garnish.



I'm not the kind to waste space in the kitchen, or in a recipe post! Enjoy it now, without the scroll:


                                                                           


Ingredients


1 dozen nectarines
1 package of bacon (or substitute)
fresh mozzarella pearls
fresh cut basil sprigs
fresh cut chocolate mint sprigs


                                                                           



Instructions



Wash fruit and herb sprigs well and set aside. Cut nectarines into halves, then quarter slices, and set aside. In a griddle or frying pan, cook bacon well over medium heat, flipping often to promote even browning, for 5-10 minutes (do not crisp). Set aside on a clean cotton or paper towel to cool slightly and absorb excess fat. Once slightly cooled, wrap bacon around each fruit slice and secure in place with a toothpick or skewer. Set back into hot pan to cook slightly longer, then remove from heat to plate. Add mozzarella pearls as desired. Garnish with basil and chocolate mint leaves to serve.
